If parties stress you out, this recipe helps: the baked sheet cake freezes well, so you can prepare ahead. Traditional parrot cake colors often come from instant jelly powders, woodruff, and lemon jelly, but gel food coloring is a simple, reliable option.

How to make the Rainbow Cake
Let’s bake the rainbow. Begin by greasing a baking sheet and dusting it lightly with flour. Preheat the oven to 360°F (180°C). Beat soft butter with sugar until the mixture is light and fluffy, then add the eggs one at a time, mixing well after each addition.
Whisk the flour together with baking soda, baking powder and a pinch of salt. Alternate adding the sour cream to the foamy egg mixture and mix until combined—vigorously, but don’t overmix. Divide the batter into four small bowls and tint each portion with gel food coloring (for example: yellow, red, green, blue).
Enhance each colored portion with complementary flavorings if you like: a splash of lemon juice or grated zest for the yellow portion, crushed freeze-dried berries for red, and a hint of woodruff or mint for green. Spoon each colored batter into small piping bags or disposable freezer bags and snip the tip. Pipe the colors alternately across the baking sheet to create stripes and patterns.
Bake for about 20–25 minutes, then remove from the oven and let cool completely. For the topping, melt white chocolate or coating in a bain-marie and spread it evenly over the cooled cake. Alternatively, whisk 200 g powdered sugar with 5–6 tablespoons lemon juice to make a glossy lemon glaze. Finish with Smarties or other colorful decorations.

You can vary flavors and textures easily: add lemon zest for brightness, fold in small pieces of freeze-dried berries, or keep it simple and let the tender, airy sponge shine on its own. This cake’s light crumb and vibrant colors make it irresistible to both children and adults.
