We just began a two‑week winter break from school activities, basketball and swim practices — a welcome pause. Unfortunately, ours started with a household emergency: a frozen water pipe burst in the guest bedroom, sending water onto the mattress and carpet. After shutting off the main, calling a plumber and arranging water restoration, I needed to stay busy while waiting for help.

Baking is my go‑to when stressed, so I made another batch of Peppermint Bark Brownie Bites. I’d already baked four dozen for school holiday parties the week before, so the recipe was quick to assemble. Fresh baked treats are also a nice thank‑you for service workers; the plumbers and restoration crew appreciated the bites and some Magic Cookie Bar Cookies I put out for them.

Adapted from my Peanut Butter Cup Brownie Bites, these one‑bowl Peppermint Bark Brownie Bites are fast, easy, and satisfyingly fudgy. The peppermint bark candies add a festive crunch and a burst of minty flavor. Two dozen of these little sweets rarely last long at gatherings.

Ingredients
- 5 tablespoons butter
- 2 ounces unsweetened chocolate
- 1 ounce semisweet chocolate
- 2/3 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 2/3 cup flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 24 peppermint bark candies (I used Hershey’s Peppermint Bark Bells)
Instructions
- Preheat oven to 350 degrees. Grease a mini muffin pan and set aside.
- In a double boiler, melt butter and chocolates over simmering water, stirring frequently to avoid burning.
- Remove from heat and stir in the sugar until blended. Let the mixture cool until just warm.
- Beat in the egg and vanilla until smooth.
- Add flour, baking soda, baking powder and salt, stirring until just combined.
- Spoon about one tablespoon of batter into each muffin cup.
- Bake 10 minutes or until the centers are almost set. Immediately press a peppermint bark candy into each brownie so the top of the candy sits flush with the brownie.
- Cool completely in the muffin tin before removing.
