Chia pudding has become one of my favorite lighter desserts. I love smooth, luscious textures — like cheesecake or crème brûlée — but those treats can be high in sugar and calories. Chia pudding offers a satisfying, creamy alternative that’s easy to control for sweetness and calories, making it a smart choice for an everyday treat or a special occasion like Valentine’s Day.

When you want something sweet, it’s nice to enjoy it without overindulging. Chia seeds are nutrient-dense, low in calories and form a pudding-like texture when soaked, so they work beautifully as a base for healthier desserts. This chocolate version delivers rich flavor and the indulgence you want, while keeping things light and nourishing.

Calories and nutrition comparison

One cup of chia pudding made with unsweetened almond milk and sweetened modestly with maple syrup is roughly 150 calories, with about 5 g protein, 3 g carbs and 10 g fat. By contrast, a slice of chocolate cheesecake can reach around 450 calories with much higher carbs, fat and refined sugar. How to make chocolate chia pudding

This recipe is based on a simple chia pudding formula: 1/4 cup chia seeds, 1 cup almond milk and 1 tsp maple syrup. To make it chocolatey, stir in melted dark chocolate (or milk chocolate, or 2 tsp cocoa powder for a dairy-free option). I like to top it with vanilla Greek yogurt (0% fat) for extra protein, plus a few raspberries and a small heart cookie for a festive touch.

The pudding keeps in the refrigerator for up to 3 days. You can also freeze it without toppings and thaw overnight in the fridge.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1 tsp maple syrup
  • 1/2 cup dark chocolate or milk chocolate or 2 tsp cocoa powder
  • 1/2 cup vanilla Greek yogurt
  • fresh raspberries and your favourite heart cookies for decoration

Instructions

  • Combine the chia seeds, almond milk and maple syrup in an airtight container.
  • Whisk well, cover and refrigerate for at least 2 hours or overnight to firm up.
  • Melt the dark chocolate (microwave or stovetop) and stir it into the chia pudding until evenly combined.
  • Layer the chocolate chia pudding into two glasses, filling each to about three quarters. Add a few spoonfuls of vanilla Greek yogurt on top.
  • Garnish with fresh raspberries, a mint leaf and a couple of heart cookies, if desired. Serve chilled.
