It’s time for another Monthly Recap!
April was a busy month full of travel and great food. Between family visits, short trips, and several memorable restaurant discoveries, the month flew by. I found two new gluten-free bakeries and revisited some trusted spots around Boston.
We traveled to New York, South Carolina, and Vermont, with plenty of moments worth remembering. Here’s a recap of April’s food and travel highlights.

TNF Travels In April 2023
Number of States Visited: 6 — Vermont, New Hampshire, South Carolina, Massachusetts, New York, Connecticut.
April included three busy weekends on the road. The first weekend took us to New York for a family gathering to celebrate the life of my cousin. It was a bittersweet reunion—sad to have lost her, but meaningful to reconnect with family, share stories, and find comfort in togetherness.

The second weekend was in Vermont with Dylan’s family. I ran a 5K with his cousin LeeAnn to celebrate family birthdays. It was colder than expected, but the weekend was full of fun—and I ended up tying for my age group, which was a delightful surprise.

The third weekend we visited Dylan’s parents in South Carolina. Highlights included a front-row concert experience as a birthday gift, disc golf, and an arcade visit. I also discovered I really enjoy iced coffee—better late than never!

After those trips Dylan and I both caught a bad cold, which led to a quieter end of April. We spent the remainder of the month resting, taking walks to enjoy the spring gardens in Salem, grabbing coffee, and taking a day trip to Portsmouth, New Hampshire.

TNF Eats in April 2023
April offered many gluten-free dining wins. Here’s a breakdown by location.
New York
Popojito — 100% Gluten-Free

We first found Popojito on a road trip in 2021 and returned this month. Located in Scarsdale, it serves excellent Nex-Mex food and standout tacos. Their gluten-free churros are a fun dessert treat.
By The Way Bakery — 100% Gluten-Free

By The Way Bakery in Hastings-on-Hudson delivers on the hype. Everything I tried was both gluten- and dairy-free—the raspberry bars and cookies stood out. They have several locations around New York and Connecticut.
Vermont
Belladore Gluten-Free Bakery

I found Belladore at a coffee shop in Northfield. Their cookies were delicious, and they’re active with pop-ups around the area. It was a lovely new discovery for gluten-free baked goods in Vermont.
South Carolina
Universal Joint — Greenville

Dining gluten-free in parts of the South can be more challenging. At Universal Joint in Greenville I had to ask several questions to ensure a safe meal, but the GF burger on a gluten-free bun turned out delicious. It was worth the extra attention to detail.
New Hampshire
Popovers on the Square

Popovers on the Square in Portsmouth remains a cozy option for gluten-free popovers and soup. It’s one of our go-to spots when visiting the city, which has a similar charm to Salem.
North Shore Boston
Burtons Grill

We attended a hosted dinner at Burtons Grill and were impressed again. From gluten-free focaccia with dips to steak frites and surf-and-turf, everything was handled with excellent celiac safety. Burtons stands out for its allergy-aware approach.
TNF Reflections on April 2023

After six weeks on thyroid medication I’m feeling significantly better: more energy, improved sleep, and stronger nails. I’ll be having follow-up bloodwork soon to check progress.
On the business side, April brought important breakthroughs in content and course development. I’m planning some major shifts and new offerings for the summer and beyond—exciting changes are coming.
I’m also looking forward to spring and my birthday—my favorite time of year—and feeling grateful for the improvements in health and the momentum ahead.

TNF Travels for May….
May promises to be intense: events for Celiac Awareness Month, the Confident Celiac Community retreat in NYC, and a two-week trip to Europe. I’m excited but a little anxious about the schedule—expect a big recap next month.
