It’s hard to believe that two years ago, in the middle of a pandemic, we decided to start this blog. As Skandibaking turns two this week, I want to take a moment to reflect on what these past two years have meant to us and how the project has grown.
The idea for the blog came from a mix of boredom and a rediscovered passion for baking. In the months leading up to the launch in September 2020, Sofie and I spent countless hours baking together over FaceTime. We wanted a creative outlet that combined our love of baking with a meaningful project to work on, and Skandibaking was born.


We chose to run the blog together because it lets us combine our strengths and interests. Both of us enjoy developing recipes and experimenting with baked goods, but we bring different skills to the table. I’m more comfortable working with bread dough and yeast, while Sofie excels at technical desserts and visually striking creations. On the blog side, Sofie handles photography, videography, editing and website design, giving Skandibaking its clean, consistent aesthetic. I happily follow her lead on the visual side because she has a clear vision and great taste.
Writing is where I contribute most: I write the posts and captions for our social platforms. At first it could be a challenge to produce content when inspiration waned, but over the last two years writing has become a reliable routine. I’m also a bit less camera-shy than Sofie, so I often do voiceovers and appear in short videos. Lately we’ve been trying to show our faces more to build a stronger connection with our followers. We’ve accomplished a lot since 2020, but the journey hasn’t been without challenges. Growing an audience on social media has been tough—there are thousands of food and baking creators vying for attention. Still, we expected a slow build and committed to staying consistent. In recent months our reach has started to grow, and we’re optimistic that trend will continue. Video content feels essential to the future of food content, so we’re investing more in video and learning what works for our audience.

Another ongoing challenge is that we don’t live in the same place. For two years we lived in different cities, and for the last year we’ve been in different countries. Juggling time zones and schedules requires a lot of communication and planning. We coordinate so that posts are written in time for Sofie to photograph, and videos are edited so I can write captions and prepare social posts. Despite the logistics, we both stay involved in nearly every step of Skandibaking. It’s demanding, but seeing a finished recipe or a new video makes the effort worthwhile.
The most rewarding part of this project has been you—everyone who tries our recipes and shares their results. We love seeing your photos and reading your messages, whether it’s praise, questions, or stories about recipes that didn’t turn out as planned. Engaging with you through Instagram DMs, TikTok comments, email, or comments on the website has been a highlight. Thank you for following along over these two years. With continued effort—and a little luck—we hope to keep creating and sharing for many more years to come.
