Homemade blueberry muffins are a delightful way to start the day—light, tender, and packed with juicy ripe blueberries. Fortunately, I’m sharing a simple recipe so you can make them at home.
This morning I wanted nothing more than to stay in bed. The apartment was cozy and dim, my boyfriend had already left for work, and the dog was quiet. That calm lasted about three seconds before a neighbor’s dog began barking. One bark turned into an hour-long chorus that set every other dog in the neighborhood off and had Marble pacing back and forth at the door. My relaxed mood evaporated quickly.
Once I dragged myself out of bed, I decided to focus on one achievable goal: making homemade blueberry muffins. Some days, small goals are the most satisfying—by the evening you feel accomplished even if the rest of the day was chaotic.

Ingredients
- 4 eggs
- 2 cups white sugar
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups sour cream
- 2 cups fresh blueberries
Step 1: Preheat the oven to 400°F. Grease 24 muffin cups or line them with paper liners.
Step 2: In a large bowl, beat the eggs and gradually add the sugar while continuing to beat. Slowly pour in the oil and beat until well combined. Stir in the vanilla extract.
Step 3: In a separate bowl, whisk together the flour, salt, and baking soda. Using a spatula or spoon, fold the dry mixture into the egg mixture alternately with the sour cream until everything is just combined. Gently fold in the blueberries.
Step 4: Bake at 400°F for about 20 minutes, or until a toothpick inserted in the center comes out clean.
Notes from my test: I’m not much of a fruit person, and the full two cups of blueberries tasted a bit strong to me. Next time I would halve the blueberries if making these just for myself. I also found it easier to add the sour cream after beating the eggs and sugar—this makes combining with the dry ingredients smoother and reduces overmixing.
By midday, the muffins were done and I felt like I earned a few gold stars—hopefully the neighborhood dogs settled down by then.
