I clearly love peanut butter, and this site has featured plenty of recipes that showcase it. Still, these peanut butter chocolate chip date bars are worth adding to the rotation. They have the flavor of a blondie but require no baking and only a handful of common ingredients.
These bars are delicious straight from the refrigerator or even the freezer, but my favorite way to eat one is to microwave it for about 10 seconds. That short burst warms the bar just enough to make it slightly melty and gooey—almost like a warm blondie fresh from the oven.
What you need: Medjool dates for natural sweetness…
salted crunchy peanuts and a generous spoonful of natural peanut butter…
and semisweet or dark chocolate chips. A tablespoon of water helps the mixture bind if your dates or peanut butter are on the dry side.
To prepare, add the dates to a food processor and pulse until they form a paste. Add the peanuts and peanut butter and continue processing. Add up to 1 tablespoon of water if needed to help the mixture come together. Fold in the chocolate chips with a few more pulses so they’re evenly distributed in the dough.
Line an 8×8 or 9×9-inch pan with wax or parchment paper, press the mixture firmly into the pan, and refrigerate for two to three hours. Once chilled, slice into small squares for bite-sized bars.

Ingredients

- 2 cups salted peanuts (if using unsalted, add 1/4 teaspoon salt)
- 1/2 cup natural peanut butter
- 1 tablespoon water
