Ingredients

  • 1 large egg white
  • 45 mL pure maple syrup
  • 1.25 mL cayenne pepper
  • 2.5 mL freshly ground black pepper
  • 3.75 mL grey salt
  • 3 cups mixed raw nutsI used 217 g almonds and 180 g pecans
  • 45 mL sesame seeds
  • 45 mL millet seeds

Instructions

  • Preheat the oven to 300°F (150°C). Line a rimmed baking sheet with parchment and set aside.
  • In a medium bowl whisk the egg white until frothy. Add the maple syrup, cayenne, black pepper, and salt, and mix to combine.
  • Add the nuts and seeds and stir with a wooden spoon until everything is evenly coated. This can take a couple of minutes to ensure an even coating.
  • Spread the syrupy nut mixture on the prepared pan and toast for 25–30 minutes, stirring every 10 minutes or as needed so they brown evenly.
  • Allow the nuts to cool completely, then pack into jars for travel or snacking.
