These gluten free white chocolate blondies are chewy, buttery bars studded with white chocolate and walnuts. They come together quickly and make a great dessert to share or to keep in the freezer for an easy sweet snack.
Ingredients
½ cup Unsalted Butter, melted
½ cup Brown Sugar
1 Tbsp. Vanilla Extract
2 large Eggs
1 ½ cups Gluten Free Flour
1 tsp. Baking Soda
½ tsp. Baking Powder
½ tsp. Sea Salt
¾ cup White Chocolate Chips
1 cup Walnuts, chopped
Instructions
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or coconut oil, or line it with parchment paper.
Whisk together the gluten free flour, baking soda, baking powder and sea salt in a bowl; set aside.
In a small saucepan, melt the butter over low heat, then stir in the brown sugar until combined. Transfer to a mixing bowl and whisk in the vanilla and eggs until smooth.
Fold the dry ingredients into the wet ingredients until just combined. Stir in the white chocolate chips and chopped walnuts.
Spread the batter evenly in the prepared pan and press gently to level.
Bake for 20–25 minutes, or until the top is golden brown and a toothpick inserted near the center comes out with a few moist crumbs.
Allow the bars to cool completely in the pan before cutting into squares.
Notes
Trader Joe’s white chocolate chips are a favorite when they are available seasonally, but any white chocolate chips will work. If you prefer, omit the walnuts or substitute pecans for a different flavor and texture.
