- Bell peppers – red, yellow and orange for color (green works too)
- Onion – yellow, white or Vidalia, sliced

How to Make Sausage and Peppers in the Air Fryer
1. Slice the bell peppers and onion into strips. Toss them with about 1 tablespoon of olive or avocado oil and a pinch of salt and pepper. This keeps the vegetables moist and adds flavor.
2. If your air fryer basket is uncoated metal, spray it lightly with non-stick spray. Do not use spray on non-stick coated baskets.
3. Add the pepper and onion strips to the air fryer basket in an even layer. Place the sausages on top in a single layer so their juices can flavor the vegetables as they cook.

Cook Time
For raw Italian sausages: preheat the air fryer to 390°F (200°C) and cook for about 20 minutes, turning the sausages halfway through so they brown evenly. Use a meat thermometer to ensure the internal temperature reaches 160°F (71°C).
For precooked sausages: heat for 8–10 minutes until warmed through. Cooking times can vary by air fryer model and the thickness of your sausages, so adjust as needed.

Slicing sausages before cooking will reduce time but will also change the texture slightly. The finished result should be nicely browned sausages with slightly caramelized peppers and onions.

Make Italian Sausage Sandwiches
To assemble sandwiches, place a cooked sausage in a crusty roll, top with a generous spoonful of the peppers and onions, and add provolone slices if desired. Return the assembled rolls to the air fryer or oven just long enough to melt the cheese—about 1–2 minutes at high heat.
If you prefer, skip the cheese and serve with marinara sauce, mustard or ketchup. These sandwiches are flexible and easy to customize.

Easy Side Dishes
