How to make a Cheese Ball

Step 1: Let the cream cheese soften at room temperature for about 30 minutes so it mixes smoothly.

Step 2: Beat together the softened cream cheese, sour cream, garlic powder, chopped green onions, salt, and pepper until well combined with a hand mixer or sturdy spatula.

Step 3: Grate 8 oz of sharp cheddar cheese and mix it into the cream cheese mixture until evenly incorporated.

Joy’s Tip

Grating the cheese fresh gives better texture and flavor than pre-shredded cheese. It’s worth the extra minute.

Step 4: Cover the mixture and chill it in the refrigerator for about an hour to firm up. Chilling makes it easier to shape.

Make It Ahead

You can prepare the filling a day ahead and keep it covered in the fridge. Shape and roll the ball just before serving for best texture.

Step 5: Use a spatula and greased hands to form the chilled mixture into a ball. Lightly oiling your hands prevents sticking and helps with shaping.

Recipe Tip

I shape the ball roughly with a spatula, then finish shaping by spraying my hands with a little olive oil. It makes the process quick and neat.

Step 6: Place about 1 cup of chopped pecans in a shallow bowl. Roll the cheese ball in the pecans until it’s evenly coated on all sides.

Step 7: Transfer the finished cheese ball to a serving plate and arrange crackers around it. It’s ready to enjoy.

Tips For Success

Grate the cheese yourself: Freshly grated cheddar gives the best flavor and texture. Sharp cheddar is recommended, though medium works too.

Buy pecan pieces: To save time, purchase pecans already in pieces instead of whole nuts.

Use a butter knife: A butter knife works well for spreading the cheese ball on crackers.

Keep it chilled: Refrigerate until serving and don’t leave the cheese ball at room temperature for more than two hours.
