I have a serious love for ice cream — it’s my weakness, even though I’m allergic to dairy. If I let myself, I’d eat it for every meal. I won’t lie: I may have even had some for breakfast this morning. Because of that lack of willpower, we often avoid keeping ice cream in the house. Out of sight, out of mind, right? Be warned: this recipe might awaken your inner ice cream monster. It’s rich, creamy and full of peanut buttery goodness.

Chocolate Peanut Butter Cup Ice Cream
Ingredients
- 1 cup Whole Milk
- 1 tablespoon Cocoa Powder
- 3 egg Yolks
- 3/4 cup sugar I like brown sugar
- 1/2 pint heavy whipping cream
- 1/4 cup mini peanut butter cups, chopped Trader Joe’s are my fav
- 1/3 cup peanut butter
Instructions

Bring the milk and cocoa powder to a gentle boil, stirring so the cocoa dissolves evenly.

In a separate bowl, whisk the sugar with the egg yolks until combined and slightly thickened.

Slowly pour the hot milk mixture into the yolks while whisking constantly to temper the eggs and prevent curdling.

Cover and chill the mixture in the refrigerator for at least one hour so it’s fully cooled.

Pour the chilled custard into your ice cream maker and churn according to the manufacturer’s instructions.

While the machine churns, chop the mini peanut butter cups and warm the peanut butter in a microwave-safe bowl until it reaches a honey-like consistency for easy swirling.

When the ice cream reaches a thick, soft-serve texture, fold in the chopped peanut butter cups and gently swirl the warmed peanut butter through the ice cream to create ribbons.

Enjoy immediately for a soft texture, or transfer to a container and freeze until firm for later serving.

It may sound more complicated than it is, but the result is well worth the effort: a super creamy, custard-style chocolate ice cream with peanut butter cups and salty-sweet ribbons of peanut butter. We shared it with friends and it was a hit. My husband especially loved it — he’s a big fan of both ice cream and peanut butter, so this was love at first bite for him.
