Cherry Cupcakes with Cherry Coke Frosting
Ingredients
For the Cupcakes
- 1 box Devil’s Food cake mix plus ingredients called for on the box (substitute liquid as noted)
- 1 cup regular (not diet) Coca-Cola or Cherry Coke
- 1/3 cup maraschino cherry juice
- 24 maraschino cherries
For the Cherry Coke Buttercream Frosting
- 1 1/4 cups butter, softened
- 5 cups powdered sugar
- 2 tablespoons Coca-Cola or Cherry Coke
- 1 tablespoon maraschino cherry juice
- 24 maraschino cherries for topping
- Red food coloring, optional for color

Instructions
For the Cherry Cupcakes
- Preheat oven to 350°F. Line a cupcake tin with paper liners.
- Prepare the cake batter according to the box directions, substituting the Coca-Cola and the maraschino cherry juice for the water called for. Do NOT add any additional water.
- Fill cupcake liners about 3/4 full. Place one maraschino cherry into the center of each cupcake.
- Bake according to the box directions. Allow cupcakes to cool completely before frosting.
For the Cherry Coke Buttercream Frosting
- In a mixing bowl, beat the softened butter with the Coca-Cola (or Cherry Coke) and maraschino cherry juice until smooth.
- Gradually add powdered sugar, a little at a time, and continue to beat until the frosting reaches your desired consistency. If it seems too dry, add a splash more Coke. If needed, add a few drops of red food coloring for a pink or cherry-red hue.
- Spread or pipe the buttercream onto cooled cupcakes and top each with a maraschino cherry.
