
Seven years ago I graduated from Texas Tech University with a degree in Communications. Speaking has always felt natural to me—during my junior and senior years I delivered many speeches to large classes. After college I didn’t give any formal talks until yesterday.
A couple of weeks ago a friend asked me to speak about blogging partnerships for a Women’s Communications Association meeting. The talk needed to run 20–25 minutes. My first reaction was panic, but after going back and forth with my nerves I agreed to do it. For the past two weeks I’ve been anxious and a bit on edge preparing. I might even have benefited from a glass of wine beforehand to calm my nerves. In the end I made it through the presentation and it was a great confidence booster. I love to chat and I love blogging, so speaking about the topic felt right.

With all that going on, I haven’t been thinking much about meals at home. Lunch and dinner were a little neglected while I focused on preparing the talk and trying to stay calm. That made me appreciate quick, simple recipes that come together with minimal effort.
Today I’m sharing an easy, fast recipe that most of you can make with three common ingredients already in the fridge: ham and cheese croissants. These are perfect for a quick lunch or a simple family meal and take under 20 minutes from start to finish. My daughter Olivia loved them—she ate two whole sandwiches and asked for more. They’re a reminder that sometimes the easiest recipes are the most satisfying.

Ham and Cheese Croissants
8 croissants

Ingredients
- 8 ounce container of crescent rolls
- 8 individual slices of ham lunch meat
- 1/3 cup plus 1 Tablespoon of grated cheese (any kind you prefer)
- 1 egg white
Instructions
Preheat the oven to 350°F (175°C).
Unroll the crescent roll dough and separate it into the eight pre-cut triangles. Place one slice of ham on each triangle, add the grated cheese on top, then roll each up starting from the wide end toward the tip. Brush the tops with egg white to create a glossy finish.
Arrange the croissants on a non-stick baking sheet and bake for 12–14 minutes or until they turn golden brown. Serve warm.
