Ingredients

  • 4 lbs. beef roast (chuck or bottom round)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. vegetable oil
  • 1 1/2 lbs. red potatoes quartered
  • 1/2 cup white onion (one small onion)
  • 1 1/2 lbs. carrots peeled (cut if large)
  • 1/2 tsp. minced garlic
  • 1 tsp. dried thyme
  • 1 tsp. dried oregano
  • 1/3 cup balsamic vinegar

Instructions

  • Sprinkle the roast with salt and pepper.
  • Heat a large pan over medium-high heat and add the oil.
  • Brown the meat on all sides, then transfer it to the slow cooker.
  • Arrange the potatoes and onion around the roast and sprinkle in the garlic, oregano, and thyme.
  • Drizzle the balsamic vinegar over the roast and vegetables.
  • Place the carrots on top of the roast.
  • Cover and cook on LOW for 8 hours, avoiding opening the lid while it cooks.
