For a subtle, fruity smoke I favor fruit or nut woods—pecan, apple, or cherry are excellent choices. For this ham I used apple wood chunks to add a sweet, mellow smoke that complements the glaze.

If you want to change the flavor profile, try topping the ham with a coffee-infused gravy, a pepper-onion beer sauce, or any favorite pan sauce. Those options pair especially well with the sweetness of the glaze.

Ingredients

  • 1 spiral-sliced half ham
    about 10 pounds with natural juices
  • Your favorite BBQ rub

For the basting sauce

  • ¼ cup maple syrup
  • ½ stick salted butter melted

Instructions

  • Preheat your smoker to 225°F. You can also use an oven or grill set for indirect cooking—keep the temperature low to avoid drying the ham and baste often.
  • Add two small chunks of fruit wood such as apple or cherry. Use only a little wood since the ham is already smoked.
  • Sprinkle the ham with your BBQ rub and gently massage it into the meat, then place the ham on the smoker.
  • Mix the maple syrup and melted butter to make the basting sauce.
  • Baste the ham with the sauce every hour to build a glossy, sweet crust.
  • Continue cooking for roughly 5 hours, or until the internal temperature reaches 140°F. The ham is already cooked; you are warming it and adding flavor.
  • Let the ham rest for 20–30 minutes before carving so juices redistribute.
