Funfetti Cake Mix Cookies
I’m a fan of bright colors—mint is a personal favorite—but I truly love them all. Baking is one of the best ways to play with color and small details to make a simple treat feel special.
These cookies are inspired by other colorful treats and are perfect if you want a quick, cheerful dessert. They require only five ingredients and come together fast.

If you like colorful desserts and a sweet, soft cookie, this recipe is for you. The mix of cake mix and sprinkles gives each cookie a fun, sweet flavor and an eye-catching look.

Cake Mix Cookie Tips
- Any 15–16 ounce boxed cake mix will work. This recipe was tested with Betty Crocker Super Moist Rainbow Chip, but Funfetti or similar mixes are fine.
- Chill the dough for 45–60 minutes. Chilling is important so the dough firms up enough to shape and roll. Chill no longer than an hour—under 1 hour gives a soft, chewy cookie; chilling too long can produce a harder texture.
- Store cookies in an airtight container for up to one week, or freeze for up to three months.

What You Need to Make Funfetti Cake Mix Cookies
- 15.25 oz (approx.) Rainbow Chip or Funfetti cake mix
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract (pure or imitation)
- About 1/2 cup rainbow nonpareils for coating
- Cookie sheet and parchment paper

How to Make Funfetti Cake Mix Cookies
In a large bowl or in a stand mixer fitted with a paddle attachment, combine the cake mix, vegetable oil, eggs, and vanilla. Mix until everything is incorporated; the dough will be slightly sticky.

Chill the dough for 45 to 60 minutes. Set a timer so you don’t chill the dough longer than an hour.
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Use a medium cookie scoop to portion dough, then drop each scoop into a bowl of nonpareils. Roll the dough ball in the sprinkles until coated, and place the cookies on the prepared baking sheet at least 2 inches apart.

Bake for 8 to 9 minutes. The cookies will look puffy and slightly underbaked—do not overbake. They will finish setting on the baking sheet after you remove them from the oven.
Let the cookies rest on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.

Once cooled, serve with milk or package them up as a bright, homemade gift.

Store leftovers in an airtight container to preserve freshness.
