Ingredients
- 1 large egg
- 1/4 cup mashed banana
- 1/4 cup shredded carrots
- 1/4 cup nonfat plain Greek yogurt
- 2 tablespoons Monk Fruit sweetener
- 1/4 cup self-rising flour
- 1 teaspoon pumpkin pie spice
Frosting
- 4 tablespoons light cream cheese spread
- 4 tablespoons zero-calorie powdered sweetener
Instructions
- In a mixing bowl, combine the egg, mashed banana, shredded carrot, Monk Fruit sweetener, and Greek yogurt. Mix until well blended.
- Gently fold in the pumpkin pie spice and self-rising flour until just combined.
- Grease four silicone muffin cups and divide the batter evenly among them.
- Bake at 350°F (175°C) for 15–20 minutes, or until a toothpick or knife inserted in the center comes out clean.
