Vegan Tofu Lettuce Wraps with Flavorful Asian-Inspired Sauce

These easy vegan tofu lettuce wraps are perfect for meal prep. I make a batch of vegan minced “pork” and a generous batch of yum yum sauce so I can assemble lunches for the week. Pack the cooked “pork” in one compartment of a reusable container, the yum yum sauce in another, and several butter or bibb lettuce leaves in a third. Take it to work, on a hike, or anywhere you need a portable lunch. When you’re ready to eat, spoon the “pork” into a lettuce leaf, drizzle with yum yum sauce, fold and enjoy.

What You Need For These Vegan “Pork” Lettuce Wraps:

  • Tofu: Used to make the minced “pork.”
  • Shiitakes, liquid smoke, gochujang, mirin, soy sauce, sesame oil, ginger, garlic: These ingredients form the flavorful marinade for the tofu.
  • Veggies: Grated vegetables such as carrots and bell peppers add texture and color to the tofu mixture.
  • Vegan mayo: The base for a creamy yum yum sauce.
  • Tomato paste, rice wine vinegar, paprika, cane sugar, vegan butter, garlic powder: Whisked into the mayo along with mirin, water, salt and pepper to make the yum yum sauce.
  • Lettuce: Butter or bibb lettuce works best because of their large, tender leaves.

Ingredients

Yum Yum Sauce

  • 1 Cup Vegan mayo (I used Follow Your Heart)
  • 2 Tablespoons Tomato paste
  • 1 Tablespoon Rice wine vinegar
  • 1 Tablespoon Mirin or extra rice wine vinegar
  • 1 Tablespoon Organic cane sugar
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 Tablespoon Vegan butter, melted
  • 2-3 Tablespoons Water
  • Salt and pepper to taste

For The Lettuce Wraps

  • 1 Recipe Vegan minced “pork” (see notes)
  • 1 Head Butter or bibb lettuce
  • Chives and sesame seeds for topping

Instructions

  • Whisk together the vegan mayo, tomato paste, rice wine vinegar, mirin, sugar, paprika and garlic powder to make the yum yum sauce.
  • Add the melted vegan butter and whisk until smooth.
  • Thin the sauce with 2 tablespoons of water; add a third tablespoon if needed. Season with salt and pepper, taste and adjust. Refrigerate the sauce for at least 4–6 hours to let the flavors meld.
  • Prepare a batch of vegan minced “pork” and allow it to marinate for 4–6 hours as directed by your recipe.
  • When ready, cook the minced “pork” according to its instructions.
  • Let the cooked “pork” cool slightly. For meal prep, place some in one section of a container, the yum yum sauce in another, and several lettuce leaves in a third. Refrigerate until needed.
  • To eat immediately, spoon a few tablespoons of minced “pork” into a lettuce leaf, drizzle with yum yum sauce, sprinkle chives and sesame seeds, fold and serve.
