Meal inspiration
I’ve already made my healthy carrot cake with cream cheese frosting three times this month — Jeff asked for it for his birthday and we haven’t stopped. Somehow it’s one of the rare ways my kids eat veggies!

For breakfasts I’m craving a simple combo: eggs cooked in my favorite extra virgin olive oil, avocado toast on Silver Hills Bakery bread, sauerkraut for fermented goodness, and fresh microgreens and dill. It’s an easy, flavorful way to add more greens.

I revisited my Instant Pot Veggie Pad Thai and remembered how delicious it is — tons of herbs and fresh mint really elevate it.

We’re eating a lot of Mediterranean-style meals lately: grilled chicken shawarma, roasted cauliflower and potatoes, tahini-yogurt sauce, and a romaine mix with a garlicky dressing.

For snacks, the higher-protein chocolate chia pudding topped with strawberries and cacao nibs is a winner.

This salad has been a go-to: spinach and basil, air-fryer roasted sweet potatoes, tomatoes, mini fresh mozzarella, peppered turkey, and my favorite balsamic vinaigrette.

Leftover roasted curry cauliflower with chickpeas, sauerkraut, rice, romaine, avocado, green onions, and a creamy sauce makes a satisfying lunch bowl.

I’m loving homemade hot chocolate made in my Nespresso frother: unsweetened soy milk, a tablespoon of cacao, a pinch of salt, a touch of honey or maple syrup, blended until frothy and finished with a hint of vanilla. So cozy.

Quick healthy tuna salad with sauerkraut makes an easy 10-minute lunch, served with crackers.

Blackened mahi mahi from the freezer, served with Instant Pot sweet potato mash (sweet potatoes, butter, cinnamon, salt) and air-fried green beans, has been a simple, tasty dinner. For the kids I sometimes plate a milder version — no stress if they skip the fish or veggies.

Friday pizza night is a family favorite. Dough Counter’s Sicilian with pepperoni and hot honey is our current obsession. I’m always curious about frozen pizza recommendations, so feel free to share yours.

Sheet pan shrimp with lemony potatoes and roasted veggies is my go-to seafood night meal, and sausage pasta with broccoli, parmesan, and olives is a comforting, yet light dinner — I usually use chicken sausage and Brami pasta.


Things I’m Loving Lately
- I recently started the book Fourth Wing and I’m listening to the long audiobook on Libby — it’s moving quickly and I’m enjoying it.
- I’ve been journaling and meditating for ten minutes each morning before my kids wake up for nearly a month. Using the Calm app and a short meditation practice has helped my mental clarity and physical well-being. The combination of inner work and consistent habits has made a meaningful difference for chronic issues I’ve dealt with.
- I’m not great with expensive sunglasses, so I’ve been sticking with an affordable $15 pair that I love.
- Fun socks to style with Adidas Sambas have been a small joy — I’m excited to wear them with a dress and blazer at a conference next month.
- I use a hair cream to style my son Max’s hair every morning and we recently bought a second bottle because it works so well.
- Jeff found a carpet cleaner that we’ve been using all over the house — stairs, couches, and rugs — and it’s surprisingly satisfying to see the results.
