Cute bunny cake for Easter & Spring Gatherings

  • In this video tutorial you’ll learn a couple of approachable cake-decorating techniques, including a simple double barrel cake construction.

A double barrel cake is essentially a tall cake divided about halfway with a cake board and supports. It follows the same principle as a tiered cake, but both sections are the same diameter and are frosted as a single unit. This design also adapts easily to a standard tier.

  • The cake is covered in short buttercream “grass” piping for a textured spring look, and the focal point is a sweet fondant bunny cut-out made using a template for easy, consistent results.

We finished the bunny with a few buttercream piped accents, an edible ink pen for the eye, some pink petal dust on the cheeks and ear, and a tiny fondant bow. These small touches make the design feel polished without adding complexity.

This bunny cake is ideal for spring gatherings, Easter, or as a charming baby shower cake. We hope you enjoy the video demonstration.

A few additional Notes for this Sweet Bunny Cake…

For frosting we used our Fluffy Vanilla Buttercream recipe, but any crusting vanilla buttercream will work well. The buttercream grass creates a delightful texture but does take time: covering a double barrel 6-inch cake in short grass piping took about 40 minutes.

If you’re short on time, consider alternatives such as spinning the cake on a turntable and adding horizontal ridges with a spatula, or keeping the finish smooth. There are many quick ways to add texture or simple piping to a cake.

Materials

  • Template for Bunny (fondant)
  • Four 6-inch cake layers
  • Piping tips: Wilton 233, Ateco 133, Round tip 2, Round tip 12 for tail
  • Piping gel (for attaching bow)
  • Coloring gels: greens for grass, deep pink for nose
  • Buttercream: Fluffy Vanilla Buttercream or similar crusting vanilla buttercream
  • Cake boards and supports for double barrel construction (we used two boards and four bubble tea straw supports)
  • Miscellaneous: parchment paper, jelly beans, small paint brushes, pink petal dust, food coloring pen for eye

Instructions

  1. Crumb coat the cake with green buttercream.
  2. Chill until the frosting is firm and transfer to the final cake base or pedestal.
  3. Cover the cake in short buttercream grass.
  4. Knead a bit of tylose into fondant for the bunny and roll to about 1/8-inch thickness. Using the template, cut out two bunnies and allow to dry on parchment.
  5. Let the fondant bunnies set until they can be easily picked up (about 30 minutes).
  6. Draw the eye with a black food coloring pen and add pink petal dust to the cheek and ear.
  7. Apply buttercream to the back of the fondant bunny and secure it to the front of the cake.
  8. Optionally add a tiny bead border outline and small piped dots for accents.
  9. Add a fluffy tail with tip 12.
  10. Place jelly beans around the pedestal and secure with a bit of buttercream if desired.
