Thai Chicken Salad Lettuce Wraps

These Thai chicken lettuce wraps are a fresh, flavorful lunch that comes together in minutes. Made with wholesome ingredients, they deliver protein, fiber, and a vibrant mix of vegetables and crunchy peanuts for texture. They’re perfect for a quick meal, meal prep, or a light dinner.

I love how easy this recipe is and how it boosts my veggie intake—carrots, cabbage, and bell pepper all get mixed into a creamy, tangy peanut-yogurt dressing. If you struggle to eat enough vegetables during the day, these wraps make it effortless.

Flavor-wise, these wraps balance sweet and savory perfectly. Honey and peanut butter add sweetness and body to the dressing, soy sauce brings saltiness, and a squeeze of lime brightens everything up. Finish with crushed peanuts for crunch and fresh cilantro for herbaceous notes.

If you enjoy spicy Thai flavors, you might think of Panera’s Spicy Thai salad—this lettuce-wrap version is lighter but still satisfying. The Panera salad is higher in calories and carbs, likely due to a richer dressing, but both are protein-forward options that taste great.
