My husband and I agree on almost every food—except one: peanut butter and chocolate. I adore that combo; he can’t stand it. The result? This big bowl of peanut butter and chocolate overnight oats is all mine.
Overnight oats are simple to prepare. In a Thermomix® or a blender I combine unsweetened almond milk, a ripe banana and peanut butter, then blend until smooth. I fold in rolled oats and a spoonful of chia seeds, divide the mixture into jars or bowls, cover and refrigerate overnight. In the morning you have a creamy, ready-to-eat breakfast.
Finish with fresh fruit, nuts, or go for my favorite: extra peanut butter and a sprinkle of chocolate.
