SweeTango Chicken-Sausage Breakfast Burritos
Ingredients
- 2 SweeTango apple finely diced
- 4 fully precooked chicken sausage links
- 2 cups butternut squash frozen, cubed
- 1 cup red pepper finely chopped
- 6 eggs
- 1/2 tsp dried sage
- Salt and pepper to taste
- 8 wheat flour tortillas or Flatout flatbreads
- 1 1/2 cups sharp cheddar cheese shredded
Instructions

Preheat the oven to 350°F.

Core and finely dice the SweeTango apples.

Slice the sausages into 1/4-inch rounds, then quarter those rounds.

Cut the butternut squash into 1/2-inch cubes if not already cubed.

Spray a large nonstick skillet with cooking spray. Over medium heat, cook the diced apples, sausage pieces, butternut squash, and red pepper, stirring occasionally, until the sausage and squash begin to brown, about 6–7 minutes.

Add the eggs to the skillet and season with sage, salt, and black pepper. Stir and cook until the eggs are fully set.

Lay the tortillas flat, sprinkle each with shredded cheese, then distribute the apple-and-sausage mixture over the cheese.

Fold the short ends of each tortilla toward the center, then fold in the long sides to form a tightly closed burrito. Repeat with remaining tortillas.

Place the burritos seam-side down on a lined baking sheet and bake 10–15 minutes to warm through and help them hold their shape.
