Ingredients

    fresh baguette
  • extra virgin olive oil
  • 200
    grams
    double cream brie cheese
    (or vegan cream cheese)
  • 3
    pears
    (sliced; Bartlett recommended)
  • 3
    sprigs
    thyme
  • 1-2
    tablespoons
    honey
  • 1/4
    cup
    walnuts
    (roughly chopped)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Slice the baguette on a bias into 1/2-inch slices. Lightly brush both sides with olive oil, arrange on a baking sheet, and bake 2–3 minutes per side until golden and crisp.

  3. Top each toasted slice with a thin piece of brie or a spread of vegan cream cheese, a slice of pear, a sprinkle of chopped walnuts and a small thyme leaf. Finish with a drizzle of honey and serve immediately.
